How to Handle Phyllo Dough

I am making a dish which requires phyllo dough. I have never made anything like it before. How do I handle phyllo dough? --iVillager peck88

 

Dear peck88 :
Phyllo dough should be thawed in the refrigerator. When it's ready to use, unfold the sheets and cover the whole pile with a damp cloth. Never let the sheets get exposed to air while putting your recipe together. Handle each sheet delicately; the unused sheets can be refrozen.
