Serve Barley

It’s a simple, inexpensive side dish, and USDA researchers say enjoying one heaping cup daily can help lower your blood pressure in as little as five weeks. Barley’s artery-relaxing compounds, including soluble fiber, selenium and manganese, get the credit, says Michael F. Roizen, M.D., author of You: The Owner’s Manual.

For best results, buy the less-processed, more nutrient-rich barley that’s available at your local health food store. Barley tastes great cooked up like oatmeal or rice, it adds a hearty goodness to soups and stews, and can be cooked, cooled and then tossed with fresh veggies and vinaigrette to make a tasty salad.
