How to Make Crepes the Way the French Do

A practical and fun way to serve crepes at a luncheon or dinner party is to prepare them in advance, keep them warm, and have your guests apply their own fillings (jams, fresh fruit, Nutella, butter, and sugar for sweet crepes; sliced ham, grated cheese, salt, and pepper for savory ones).

To keep crepes warm, pile them on a heatproof plate and place that plate over a casserole half-filled with water heated to a gentle boil. Cover the crepes with a sheet of aluminum foil.
