Here are some to remember: 1 cup whipping cream = 1 cup evaporated skimmed milk 1 cup sour cream = 1 cup fat-free sour cream or fat-free plain yogurt 1 (8-ounce) package cream cheese = 1 (8-ounce) package fat-free cream cheese 1 egg = 2 egg whites 1 ounce baking chocolate = 2 tablespoons cocoa + 1 tablespoon canola oil
