How to melt chocolate

Why is it that every time I melt chocolate it becomes stiff? --iVillager beams01

 

Dear beams01:
It's called seizing. That's when moisture touches the melting chocolate, and it just freezes. Make sure when melting chocolate in a double boiler that the top pan fits tightly.
