How to reduce fat content in baked goods

Dear Baker:
How do I reduce the fat in my baked goods? --iVillager ninazk

Dear ninazk:
Reducing fat in recipes comes with a lot of trial and error. Oil is best substituted with equal amounts of fruit purees, such as applesauce, and butter-based recipes need to have the butter reduced. Oftentimes, other ingredients have to be altered, as well. Experiment with your favorite recipes. What works for one type of cake, for example, may work well for other cakes.
