| 1 lb ground beef | 1 t pepper | |
| 1 cup parmesan cheese | 1 drop chopped parsley or dried | |
| 1 cup your favorite tomato sauce | 1/2 lb domestic ham, sliced (coldcuts) | |
| 2 eggs | 1 c diced mozzerella cheese (not shredded) | |
| 1 cup bread crumbs (flavored or plain) | 1/2 lb yukon gold potatoes | |
| 1 t salt | 1/2 c olive oil |
Preheat oven to 350
Peel /wash and cut your potatoes into wedges
Mix everything together in bowl except for ham, mozzerella and olive o
Lay out a large piece of aluminum foil and sprinkle some bread crumbs on it it cover the space
Place the meat mixture on foil and pat down to about one inch thick and a square/rectangle shape
Layer the ham to cover every inch of the meat, then place the mozzerella only down the center of the meat.
Roll it up like you would a stuffed bread and make sure ends are closed.
Place in center of a baking pan and place the potatoes around it, drizzle a little bit of olive oil over meat and all over potatoes, season potatoes w/ salt, pepper and garlic salt.
Bake about an hour and 15 minutes. When potatoes are done, meatloaf is done! I guarantee you will never make meatloaf your old way again!!
