| 1 cucumber | 4 tbsp lemon sorbet | |
| 6 large, fresh mint leaves | 4 ice cubes | |
| 120 ml (4 fl oz) apple juice |
Cut a slice off the cucumber and reserve for garnish. Peel the cucumber and split it lengthwise, then scoop out the seeds with a teaspoon. Roughly chop the cucumber.
Place in a blender with the remaining ingredients. Blend until smooth. Pour into a glass, garnish with the halved cucumber slice, and serve.
