Though often used as a garnish due to its rich green color and ruffled leaves, kale is a hearty alternative to spinach and is full of fiber, vitamins A, C and K, calcium and iron. In addition to the common green kale, many supermarkets carry other varieties such as black (also called lacinato or cavolo nero) or purple. Remove the leaves from their fibrous stalks before sauteing, steaming or baking. You can even eat black kale raw in a salad.
