This quick and simple recipe is a fun twist on chicken noodle soup that the entire family will love. Coconut milk adds a slight sweetness that will be a big hit with the kids. While it contains a “good” fat, coconut milk does have a high fat content, so feel free to substitute a low-fat or light coconut milk instead.
You can also make this soup vegetarian by skipping the chicken breast and substituting vegetable broth for the chicken broth. If you can’t find rice noodles, use angel hair pasta (or really, any kind of noodle) instead.
