The Kids' Table: Make a Twist on Chicken Noodle Soup

This quick and simple recipe is a fun twist on chicken noodle soup that the entire family will love. Coconut milk adds a slight sweetness that will be a big hit with the kids. While it contains a “good” fat, coconut milk does have a high fat content, so feel free to substitute a low-fat or light coconut milk instead.

You can also make this soup vegetarian by skipping the chicken breast and substituting vegetable broth for the chicken broth. If you can’t find rice noodles, use angel hair pasta (or really, any kind of noodle) instead.

When cooking with your kids, make sure to share some fun facts with them. Chat with children about where coconuts come from, how they grow, what they look like on the outside and what's found on the inside.

Coconut milk is made by grating the “meaty” white inside and blending with water before straining to produce the “milk.” It's  said to have great health benefits. Besides having a high content of vitamins A, B and E, it also contains calcium and is believed to be a natural remedy for a number of ailments.
