Store-bought chicken patties are often filled with unhealthy fillers and preservatives. Make a batch of these savory homemade patties and keep them in the freezer for quick and easy meals throughout the week.
|2 lbs ground chicken||2 tsp kosher salt|
|2 large garlic cloves||1/2 tsp ground black pepper|
|1 bunch cilantro, rinsed and trimmed of roots and rough stems||1 cup plain panko breadcrumbs|
|1 bunch scallions, root ends trimmed||1/3 cup whole milk|
|2 Tbs smoked Spanish paprika||1 large egg|
|1/4 tsp cayenne pepper (optional)|
Combine garlic cloves, cilantro, and scallions in the food processor. Pulse a few times until everything is finely chopped, but not pureed. Transfer chopped cilantro mix to a large bowl.
Add the ground chicken, smoked paprika, cayenne if using, salt, pepper, breadcrumbs, milk, and egg. Use your hands to gently combine all the ingredients until everything is evenly distributed.
Divide mix into 8 evenly sized patties.
Preheat oven to 350 degrees and arrange patties on a parchment-lined baking sheet. Bake 20-22 minutes until cooked through. Serve immediately or let cool, wrap individually in plastic wrap, and freeze to enjoy at a later date.
