Whether you celebrate Hanukkah, Christmas or both, you’ll enjoy these delicious cookies with a secret ingredient: potato chips. Feeling decadent? Add a handful of butterscotch and chocolate chips to the batter.

| 1 cup (2 sticks) unsalted butter, softened | 2 teaspoons vanilla | |
| 3/4 cup granulated sugar | 1 3/4 cups all-purpose flour | |
| 1 large egg | 3/4 cup crushed potato chips |
Preheat the oven to 350 degrees F. Lightly grease two cookie sheets or line them with parchment paper and set aside.
Using an electric mixer on medium speed, cream the butter, sugar, egg and vanilla in a large bowl.
Gradually add the flour and stir well, scraping down the bowl. Stir in the potato chips. (If adding candy chips, stir those in now too.)
Drop teaspoonfuls of dough onto the cookie sheets, leaving 2 inches between each cookie.
Bake 12 to 15 minutes, or until light golden brown.
