Getting fresh honey, lavender and lemons at the farmer's market is best. Use a mild honey such as wildflower or clover. If Meyer lemons are available in your area, try using them in this recipe; they have a sweetness that regular lemons don't have.
|1 1/4 cups honey||6 to 8 lemons, regular or Meyer|
|6 fresh lavender stalks, or 4 dried|
Add 6 cups of water to a pot with the honey and the lavender. Over medium heat, stir until the honey is dissolved and the mixture is very warm. Remove from heat and cool completely.
Squeeze the lemons until you have 1 cup of lemon juice. Add to the cooled honey mixture. Refrigerate until chilled. Remove the lavender stalks and serve over ice.
