Chicken nuggets, chicken tenders, roasted chicken -- chicken seems to be one of the leftovers we always bring home after a restaurant meal. This recipe lets you use it in a more interesting way.
| 1 1/2 cups chopped leftover chicken, with any bones removed | 1 tablespoon whole capers | |
| 1/4 cup chopped cucumber | 1 tablespoon olive oil | |
| 1 cup halved cherry tomatoes | 2 teaspoons sherry vinegar or white wine vinegar | |
| 4 tablespoons crumbled feta cheese | Pinch salt | |
| 1 teaspoon Italian seasoning mix | Pinch black pepper | |
| 12 olives, pitted and chopped | 1 head butter lettuce (also known as Boston lettuce) |
In a large bowl, combine the chicken, cucumber, tomatoes, feta cheese, Italian seasoning, olives, capers, olive oil, salt and pepper.
Fill the lettuce cups with the mixture, and serve.
