But now I have discovered lemon rind which adds an intense lemon flavor without all the liquid. I love to add freshly grated rind to scrambled eggs, buttermilk dressing, risotto, melted cheese sandwiches, ricotta spreads, white bean salads, fruit salad, sautéed greens, potatoes and pasta.”
