Light and Easy Book Club Luncheon

This is September, the back-to-school month, and it's time to remember to keep that bikini figure even though you can hide it under oversized wool sweaters. This light luncheon is the perfect way to entertain so that you and your guests needn't worry about too much fat or calories.

The soup is a delicious beginning. Served in small white rice bowls, it makes a wonderful presentation and keeps the guests hungry for the main-course salad. While most Chinese chicken salads served at restaurants are loaded with fats and deep-fried noodles, this version uses toasted pine nuts for crispness and much less oil in the dressing. Peaches are still readily available in September, and they are delicious sliced and served with the lemon poppy-seed muffins. If you can find mini-muffin tins, bake the muffins in the smaller tins for a delightful presentation.
