These nuts should come with a warning sign—they're highly addictive, especially when warm. Change up the recipe to your liking by adding, cumin, oregano and Tabasco, or ginger, sesame seeds and soy sauce. It’s easy to get creative, but remember not to add too much liquid to the spice rub.

| 1 pound raw pistachios in the shell | 1/2 teaspoon garlic powder | |
| 2 teaspoons paprika | 1 1/2 teaspoons salt | |
| 1/4 teaspoon cayenne pepper | 1 teaspoon olive oil | |
| 1/2 teaspoon onion powder | Grated zest of 1 lime |
Preheat the oven to 375 degrees F.
In a large bowl, place the nuts, picking through and removing any broken shells. In a small bowl, combine the paprika, cayenne, onion and garlic powders and the salt; mix well. Add the spices to the nuts with the oil and lime zest. Mix well and place on a rimmed baking sheet.
Place in the oven and roast for 15 minutes, turning with a spatula once during the cooking time. Remove from oven and serve warm or at room temperature. Will keep up to 2 weeks in an airtight container.
