|8 flour tortillas||1/2 cup salsa|
|2 cups shredded cheddar cheese||1/2 cup sour cream|
|1 1/2 cups cooked chicken|
Heat a large skillet over medium heat. Place a tortilla in the pan. Sprinkle with 1/2 cup of the cheese. Add a quarter of the chicken. Top with the second tortilla, pressing lightly. Cook the quesadilla for 2 to 3 minutes, until lightly golden. Flip the quesadilla and cook for 2 minutes longer, or until the cheese melts. Remove from the heat, cut into wedges and top with 2 tablespoons each of salsa and sour cream. Repeat with the remaining tortillas.
