| 1 pound turkey sausage, removed from casing | 3 medium red russett potatoes, shredded | |
| 1 tablespoon olive oil | 6 whole wheat bagels | |
| 1 red bell pepper, diced | 1 dozen eggs | |
| 1 cup mushrooms, sliced | 1/2 cup milk | |
| 2 cups broccoli florets, chopped | 1 cup shredded Cheddar cheese |
Preheat oven to 350 degrees Fahrenheit.
In a large frying pan, heat oil over medium temperature.
Add sausage and cook for 5 minutes, stirring continuously.
Add peppers, mushrooms, broccoli and potatoes, and combine. Cook for 10 minutes, stirring occasionally.
Meanwhile, tear bagels into bite-sized pieces. Add to sausage mixture and stir well. Pour mixture into a casserole dish.

Put in the oven and bake for 30 minutes.
Sprinkle cheese to top and continue to bake for another 10 minutes. Remove from oven and serve warm.
