Mango Applesauce

Marla Meridith, the woman behind Family Fresh Cooking, has a serious thing for applesauce. Thankfully Marla's kids feel the same way, particularly about this Mango Applesauce. Thanks to sweet mangoes, this applesauce doesn't really need any additional sugar, but feel free to add a touch of maple syrup or agave if you wish.

    2 1/2 pounds Apples, cleaned, cored and cut into chunky pieces, keep the skins on (Granny Smith, Pink Lady & Fuji's are my favorite) 1 squirt of lemon juice
    2 Mangos, cleaned and pitted, skin removed and cut into chunky pieces (You can use frozen Mango too) 1 cup water
    1 teaspoon vanilla extract

      In a medium saucepan combine the apples, mangos, water, lemon juice, and vanilla.

      Bring to a boil and then lower heat to a simmer.  Simmer sauce for about 30 minutes, stirring occasionally.  Let applesauce cool for a few minutes.

      With a ladle, put the applesauce in a blender or food processor.  Puree until desired consistency is reached.  Add more water if needed.
