| 1 medium ripe mango | Kosher salt, to taste | |
| 1 Zest from 1 lime |
Using a very sharp knife, cut the stem end of the mango so that it is flat. Place the mango stem-side down so that it stands upright. Starting from the top of the fruit, cut the skin off, following the curve of the mango. Remove the seed and then cut the mango into slices.
Sprinkle lime zest and salt, to taste, over the mango.
