“Everything in moderation” is the motto of Michel Nischan, renowned chef and best-selling cookbook author whose two sons have type 1 diabetes. In an interview with the Juvenile Diabetes Research Foundation, he suggests including favorites foods in a weekly meal plan so “they become a regular, but not constant, part of your diet. This allows you to eat your favorites more often so you feel less deprived.” Nischan is also a supporter of the sustainable food movement: He’s CEO and president of the Wholesome Wave Foundation, which brings fresh fruit and vegetables to underserved communities in more than 25 states. Many of his recipes encourage foraging for the freshest ingredients, like this vegetable-studded meatloaf.
