'Misfortune' Cookies

Turn a fortune cookie into a Halloween treat with a little orange food coloring and a fun message or joke tucked inside, such as “Beware the full moon!” or “What’s a ghost’s favorite kind of pie? Boo-berry!” To make things easy, bake four cookies at a time so you can stuff in a “misfortune” and fold while each cookie is still warm.

    Ingredients

    3 egg whites 1 cup all-purpose flour
    1/2 cup sugar 3 tablespoons water
    1 stick (1/2 cup) butter, melted and cooled Orange food coloring
    1 teaspoon vanilla extract

      Write the jokes or fortunes on little strips of paper. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment or buttered foil (don’t use waxed paper—it will stick).

      Using an electric mixer on high, beat the egg whites and sugar until bubbly and frothy, about 2 minutes. Reduce speed and add the butter, vanilla, flour and water, mixing well. Spoon the batter into 2-inch circles on the parchment, leaving plenty of room in between.

      Bake 5 to 7 minutes, just until the edges brown. Working quickly, lift each cookie off the baking sheet and put a fortune in the middle. Fold the cookie in half, then curve the cookie and press the ends together. Put them on a cooling rack to set. The cookies will firm up as they cool.
