The same compound in a fine virgin olive oil that’s responsible for that slightly peppery pungency in the back of your throat is good for your heart. Several years ago, Gary Beauchamp, Ph.D., a taste-and-smell expert at the Monell Chemical Senses Center in Philadelphia, isolated it. It’s called oleocanthal, and it has powerful anti-inflammatory properties, much like aspirin. (Inflammation is a contributor to heart disease.)
