You can change this easy recipe by adding crumbled cooked sausage, diced turkey or bell peppers. No matter which variation you make, it's sure to be one of your child's favorite meals.
|1 tablespoon olive oil||1 8-ounce can tomato sauce|
|1/2 small onion, cut into 1/4-inch dice||2 cups water|
|1 cup sliced mushrooms||1 tablespoon kosher salt|
|1 teaspoon oregano||8 ounces small shells|
|1 small clove garlic, minced||1 cup grated mozzarella cheese|
|1 28-ounce can diced tomatoes in juice|
Heat the oil in a large pot over medium-high heat. Add the onions and mushrooms and cook for 2 to 3 minutes, until slightly soft. Add the oregano and the garlic and stir for 30 seconds. Add the diced tomatoes, tomato sauce and water and bring to a boil. Add the pasta and simmer for 15 minutes until the pasta is tender.
Adjust seasoning with additional salt if needed. Spoon into individual bowls and top with shredded mozzarella.
