    1 tablespoon olive oil 1 8-ounce can tomato sauce
    1/2 small onion, cut into 1/4-inch dice 2 cups water
    1 cup sliced mushrooms 1 tablespoon kosher salt
    1 teaspoon oregano 8 ounces small shells
    1 small clove garlic, minced 1 cup grated mozzarella cheese
    1 28-ounce can diced tomatoes in juice

      Heat the oil in a large pot over medium-high heat. Add the onions and mushrooms and cook for 2 to 3 minutes, until slightly soft. Add the oregano and the garlic and stir for 30 seconds. Add the diced tomatoes, tomato sauce and water and bring to a boil. Add the pasta and simmer for 15 minutes until the pasta is tender.

      Adjust seasoning with additional salt if needed. Spoon into individual bowls and top with shredded mozzarella.
