Overcooked vegetables

With so many things going on in the kitchen, it’s easy to forget about the vegetables roasting in the oven or boiling on the stovetop. Overcooking for even a minute can bring out the worst in a vegetable (think limp, bitter Brussels sprouts). So, with no vegetable dish, what to do?

Solution: Break out your blender and transform the overcooked vegetables into a creamy soup that can still double as a veggie dish. Puree the vegetables with some chicken or vegetable stock. Stir in some cream and season with salt and pepper before ladling into bowls.
