The familiar flavor of fresh peaches swimming in champagne bubbles is cause for celebration, and a Peach Bellini is the perfect beverage for toasting happy occasions, or simply the fantastic weather. The colors and flavors remind us of weddings and sunsets by the shore—joy in a glass!

| 1/2 cup mint leaves, washed and dried (about 10 leaves) | 1 bottle (750 ml) champagne | |
| 4 ounces Grand Marnier | 1 sprig of thyme, for garnish | |
| 2 cups fresh peaches, peeled and diced (about 5 peaches) |
In a bar glass muddle mint leaves with Grand Marnier.
Strain into a blender and add the peaches. Purée until smooth.
Pour peach mixture into the bottom 1/3 of each glass and top with champagne.
Garnish with a sprig of thyme and serve.
