Peach Bellini

    1/2 cup mint leaves, washed and dried (about 10 leaves) 1 bottle (750 ml) champagne
    4 ounces Grand Marnier 1 sprig of thyme, for garnish
    2 cups fresh peaches, peeled and diced (about 5 peaches)

      In a bar glass muddle mint leaves with Grand Marnier.

      Strain into a blender and add the peaches. Purée until smooth.

      Pour peach mixture into the bottom 1/3 of each glass and top with champagne.

      Garnish with a sprig of thyme and serve.
