Peanut Butter and Jelly Bars

Packed with flavor, these chewy dessert bars take peanut butter and jelly to a whole new level. Kids can help measure out ingredients and stir them together, press dough into the pan, smooth on the filling and crumble remaining dough on top.

    2/3 cup dark brown sugar 1/2 teaspoon baking powder
    1/2 cup (1 stick) unsalted butter, softened 1/2 teaspoon salt
    1/2 cup peanut butter (either smooth or crunchy) 1 1/2 cups rolled oats
    1 cup all-purpose flour 3/4 cup jam or jelly (strawberry, raspberry, grape or other flavor of your choice)

      Preheat the oven to 350 degrees F and grease a 9x9-inch metal baking pan.

      In a medium mixing bowl, cream the sugar, butter and peanut butter until smooth.

      In a small bowl, stir together the flour, baking powder and salt. Add the flour mixture to the peanut butter mixture all at once and blend until combined, then stir in the rolled oats.

      Spread half the mixture into the bottom of the pan, pressing it smooth with your fingertips. Spoon the jelly or jam over this base, spreading to coat, then crumble the remaining peanut butter mixture over the top.

      Bake 30 to 35 minutes, until the top is lightly golden. Cool completely before cutting into squares.
