|1/4 cup heavy cream||2 tablespoons powdered sugar|
|1/4 cup creamy peanut butter||1 box Nabisco chocolate wafers|
|2 ounces cream cheese, softened|
Whip the heavy cream in a medium mixing bowl until stiff peaks form. Set aside.
Beat the peanut butter, cream cheese and powdered sugar together in a separate mixing bowl until whipped and creamy. Add the whipped cream and beat until just combined.
Line a medium rimmed baking sheet with waxed paper. Place a small dollop (about 1 1/2 teaspoons) of the peanut butter filling on a chocolate wafer cookie. Repeat with another cookie and place on top of to create a stack, then top with a final cookie to create a three-cookie sandwich held together by two layers of filling.
Repeat with the remaining cookies. Chill the cookie bites for at least 6 hours and serve cold.
