Pear and Cranberry Upside-Down Cake

Upside-down cake, an American twist on the classic French tarte tatin, is one of my mother’s family traditions, but for the holidays she used winter fruit instead of canned pineapple. I prefer to make it with pears, but apples will work too. Lining the bottom of the pan with parchment paper takes the fear out of inverting the cake—it will never stick. Make the cake mid-morning and cover it loosely with foil; just a few minutes before.
