You could pull a Betty Draper and stuff some dates with cheese and almonds – or you could just slice ‘em up for a modern-rustic take on the cocktail party standard. Simple to prepare, but quick to disappear from the platter.

| 1 box flatbread crackers | 1 dozen pitted dates | |
| 1 wedge Pecorino Romano cheese |
Gently break each flatbread into bite-size pieces.
Slice the cheese into wafer-thin, translucent pieces.
Cut the dates lengthwise, 4 slices per date.
Assemble the flatbreads with a piece of Pecorino and a slice of date on each bite. Serve immediately or refrigerate, loosely covered, overnight, and bring to room temperature before eating.
