No need to hate that potato if you’re trying to eat right. While we can’t advocate piling your plate with French fries or tater tots(oh we wish!), a nice baked potato is a fantastic source of potassium and vitamin C and even has the same amount of protein as a half-cup of milk…so take that, Dr. Atkins. Thought all the nutrients were in the skin? Not so, although most are concentrated just under the skin, so it’s best to cook them with the skin on to preserve all their wonderful goodness.
