| 4 skinless chicken breasts approximately 6 ounces each (wash and pat dry) | 1 tablespoon cider vinegar | |
| 1/4 cup plum jam | 1/2 cup crushed cashews |
In small saucepan, stir together plum jam and vinegar over low heat, until mixture reaches a spreading consistency
Remove from heat, and using a basting brush, coat chicken breasts with mixure
Roll in crushed cashews
Bake on cookie sheets coated with cooking spray at 350 degrees for approximately 45 minutes (depending on thickness of breasts.) If you are using boneless breasts, cook for less time...approximately 25 minutes.
