We’re already seeing the humble corn kernel used in unique ways, like what chef Daniel Patterson of Coi in San Francisco has done by briefly cooking then straining popcorn for an inventive take on grits. In Washington, D.C. alone, the past year has seen the introduction of not one, but two food trucks, Stella’s PopKern and Popped Republic, that offer own array of flavored blends of the snack food. In Los Angeles, Next Door by Josie has been serving a wildly popular beer-bacon caramel corn (pictured) on its snack menu; and in Philadelphia, Khyber Pass Pub makes popped corn accented with Benton’s bacon grease.
