Pregnancy journal: FOOD!

I can’t even begin to explain the relief I experienced this week. It had nothing to do with the baby but was entirely focused on Jacob’s well being. This week we visited the allergist for a followup visit and to test the remaining foods Jacob (and I) have been avoiding. Although I expected to be told to “try” the offending foods, I never expected to feel as happy about it as I do! I never expected Jacob to understand the events, let alone react as he has. He was given the green light to eat whatever he wants!

Eggs are the only remaining food we’re avoiding at this point. The dairy, soy and corn products have been previously introduced. That may not sound like much, until you try eating a simple breakfast. It’s cereal only. No pancakes, french toast, muffins, donuts, etc. Bacon and eggs were out. Really it was quite boring. Not only that, but we couldn’t eat out if the meal included bread or pasta. Dessert was strictly forbidden unless I baked it myself.

So, what did we do? Well, on the way home from the allergist we stopped to buy a cookie with egg in it. Egg products are best tolerated if they are baked, as this changes the protein structure, making them easier for most people to digest. Believe it or not, after two years of avoiding all egg products, we had a hard time finding a cookie with whole eggs in it, but, when we did, we feasted! Jacob was so excited that he asked me to drive him to Daddy’s work so Daddy could join in the fun. This we did and experienced no allergic reaction! The next morning (according to the doctor’s instructions) we prepared a scrambled egg and offered it one bite at a time to Jacob, then waited over an hour to watch for reactions. There were none other than a two year old repeatedly asking for more “corn eggs.” I guess that scrambled eggs resemble kernels of corn when you’re two!


In short, Jacob and I are now eating whatever we want, whenever we want, and, we’re thoroughly enjoying it! Last week, one of Jacob’s friends was diagnosed with acute allergies to dairy, eggs, peanuts and tree nuts. His Mom has been calling me daily for pointers about what to eat and how to use various substitutes in traditional recipes. I’m re-living the whole experience from day one all over again, though this time from a distance. I feel somewhat guilty about enjoying my newfound freedom as their family begins to be quite restrictive. But, to be honest, I’m incredibly happy.
