|1 1/2 cups bread crumbs||1/2 cup Italian parsley, chopped|
|5 eggs||1/2 cup cooked onions|
|1 cup whole milk||1 Tbs salt|
|3/4 cup pecorino romano||1/2 Tbs black pepper|
|1 Tbs confit garlic||2 1/2 lbs ground prime beef|
Combine bread crumbs, eggs, onions, milk, cheese, garlic, parsley, salt and pepper in a large bowl. Add beef; mix by hand until just combined.
Scoop approximately 2 oz. meat mixture to form balls and arrange on sheet pan, chill.
Bake at 500° for 12 minutes.
Remove from oven, drain and bake in simmering tomato sauce. Cook thoroughly.
To serve, spoon ½ cup of tomato sauce into serving bowl. Place six meatballs on top of sauce and sprinkle with parmesan cheese. Top with leaves of basil and parsley.
