Preheat oven to 400°. Whisk together egg and 2 tsp. water. Unfold 1 thawed puff pastry sheet on an ungreased baking sheet; brush with egg mixture. Cut 4 (1⁄2-inchwide) strips from one side of pastry, cutting parallel to seam of pastry. Place strips along outer edges of pastry, overlapping and trimming ends of strips as needed.

Prick bottom of pastry generously with a fork. Sprinkle bottom of pastry with 1 tsp. of your favorite seasoning blend. If desired, gently press fresh herb sprigs onto bottom of pastry. Bake at 400° for 6 minutes. Prick bottom of pastry generously with fork again (to prevent center from rising). Bake 6 more minutes or until lightly brown. Let cool on pan 2 minutes; transfer to a wire rack, and let cool 45 minutes or until completely cool.
