Quick and Easy Stir-Fry

Shrimp, Pineapple and Pepper Stir-Fry
Serves 1
This recipe can be easily doubled or tripled. To save time, you can buy the shrimp pre-cooked. Pineapple and peppers may also be purchased pre-cut at many supermarket salad bars.

  • 1/4 pound shrimp
  • 1/4 pound sliced red and green peppers
  • 1/4 pound pineapple chunks
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 tablespoons soy sauce

In a wok or medium skillet, heat sesame oil over high heat. Once oil is hot, add peppers and stir-fry for one minute. Add pineapple and shrimp to the pan and continue to stir for about two minutes or until mixture is hot. Add honey and soy sauce and cook for two more minutes or until ingredients are hot. Serve over rice.

Snow Pea Chicken
Serves 2

  • 1 tablespoon sesame oil
  • 1 shallot, chopped
  • 1 clove garlic, chopped
  • 1/2 pound thin boneless chicken breasts
  • 1 tablespoon soy sauce
  • 2 tablespoon black bean sauce
  • 1/2 pound snow peas

In a wok or medium saute pan, heat sesame oil. Add chicken and stir-fry until cooked through (approximately three minutes). Once cooked, remove chicken from pan and slice into 1/2-inch strips. In the same wok or saute pan, stir-fry shallots, garlic and snow peas together for approximately three minutes or until shallots and garlic turn translucent. Add sliced chicken, black bean sauce and soy sauce to pan and continue to stir-fry until chicken is hot. Serve over rice.
