Getting ready in the morning can be the ultimate exercise in grand multitasking. Between making sure lunches are packed, kids are showered and clothed and pets are fed, the last thing we have time for is a breakfast that takes more than a few minutes to prepare.
This dish is best made the night before and kept in the refrigerator to allow the flavors to marry, then reheated in the morning. I also like to change the vegetables depending on what I have leftover in the fridge—zucchini, broccoli or asparagus.
