I have a love/hate relationship with summer. I have a summer birthday, so growing up summer always meant months and months of celebrating, presents and pie. Growing up, I was always in the pool, first as a swimmer and later as a lifeguard. Summer meant relaxation, fun and speedo tans.
As an adult with a real job (where a bathing suit is not considered professional wear) I find myself cursing summer for making me sweat on the walk to work, for making it impossible to sleep under a blanket, for making it unbearable to be in the kitchen with the oven on.
When it comes to summer I've taken the "Can't beat 'em? Join 'em!" route. Is it so hot that my favorite jeans are making me want to die? Buy a new skirt! Does the humidity give my hair height and size that the hair bands of the '80s burned a hole in the ozone to achieve? Ponytail! Because no matter what I find to complain about, I will always prefer being able to enjoy dinner outside to feet of snow. So on days when the heat is so oppressive that even my tomatoes are glaring at me, I fix myself a refreshing beverage, kick up my feet, and thank the stars that it's summer.
Raspberry Mint Lemonade
1 cup water
1 cup sugar
1 tbsp lemon zest
1 pint of raspberries
1/4 cup fresh mint
4-5 cups water
Start by making your simple syrup. Bring cup of water and cup of sugar to a boil. Stir in lemon zest. Set aside to cool.
Pour syrup in a pitcher. Add half of the raspberries. With a mortar and pestle (or a fork and a bowl), mash the remaining raspberries with the mint. Add that to the pitcher.
Juice all of your lemons but one. You should have approximately one cup of lemon juice. Add to the pitcher. Slice the remaining lemon, removing the seeds, and add that.
Fill the pitcher with 4 to 5 cups of water, tasting it after 3 cups and diluting to your personal preference. Chill and enjoy!
