Don’t let an open bottle of red wine go to waste just because you don’t plan on finishing it. Turn it into your own “artisanal” vinegar instead.

| 1/2 bottle or more red wine |
Pour wine into a clean jar and secure cheesecloth or a coffee filter over the top with a rubber band.
Let sit in a cool, dark place for 6 to 8 weeks, until it smells like vinegar. (Note: You can continue to add red wine to the original batch for a never-ending supply. It takes only a few days for newly added wine to turn to vinegar.)
