Fresh peaches and goat cheese headline this simple, no-cook salad recipe. The eight-ingredient vinaigrette, made with pantry staples, takes minutes to make and is a delicious complement to the other ingredients in the salad. Use a store-bought rotisserie chicken to save time in the kitchen. Serve with herbed bread.
|2 1/2 Tbs balsamic vinegar||1/4 tsp freshly ground black pepper|
|1 1/2 Tbs extra-virgin olive oil||2 cups shredded skinless, boneless rotisserie chicken breast|
|1 1/2 Tbs minced shallots||2 cups sliced peeled peaches|
|2 1/2 tsp fresh lemon juice||1/2 cup vertically sliced red onion|
|3/4 tsp maple syrup||1/4 cup chopped pecans, toasted|
|3/4 tsp Dijon mustard||1 (5-ounce) package gourmet salad greens|
|1/4 tsp kosher salt||2 Tbs crumbled goat cheese|
Combine first eight ingredients; stir with a whisk.
Combine chicken and next four ingredients (through greens) in a large bowl. Add vinaigrette mixture; toss gently. Sprinkle with cheese.
