    2 1/2 Tbs balsamic vinegar 1/4 tsp freshly ground black pepper
    1 1/2 Tbs extra-virgin olive oil 2 cups shredded skinless, boneless rotisserie chicken breast
    1 1/2 Tbs minced shallots 2 cups sliced peeled peaches
    2 1/2 tsp fresh lemon juice 1/2 cup vertically sliced red onion
    3/4 tsp maple syrup 1/4 cup chopped pecans, toasted
    3/4 tsp Dijon mustard 1 (5-ounce) package gourmet salad greens
    1/4 tsp kosher salt 2 Tbs crumbled goat cheese
