    Ingredients

    4- to 5-pound boneless pork loin roast, trimmed of silver skin (ask your butcher to do this) 1 tablespoon black pepper
    1/2 cup Dijon mustard 2 tablespoons chopped fresh rosemary
    2 tablespoons kosher salt 4 medium garlic cloves, minced

      This deliciously flavorful roast looks impressive but is incredibly easy to make. Just mix up a quick paste, spread on the meat, and then let it cook in the oven while you prep your side dishes and dessert.

      Preheat the oven to 325 degrees F.

      Rinse the roast and pat dry with paper towels. Place on a rimmed baking sheet.

      In a small bowl, combine the remaining ingredients. Spread the Dijon mixture all over the outside of the roast. Place on the baking sheet and roast uncovered for about 2 to 2 1/2 hours, or until the internal temperature reaches 150 degrees F. The roast will continue to cook when it's removed from the oven. Let the roast rest on a cutting board for 15 to 20 minutes. Slice into 1/4-inch slices.
