Roasted Grapes

Roasting isn't just for turkey. Roasting fruit, in this case grapes, brings out its inherent sweetness.

Servings: 2

Total Time: 25 minutes

Active Time: 10 minutes

Ingredients:

  • 1/2 pound grapes, separated into small clusters
  • 3/4 teaspoon extra-virgin olive oil
  • 1/8 teaspoon kosher salt
  • Freshly ground pepper to taste
  • 1/4 cup low-fat plain or vanilla yogurt

Directions:

Preheat oven to 450 degrees F. Arrange grape clusters in a single layer on a baking sheet. Drizzle with oil and sprinkle with salt and pepper. Roast until the skins are slightly crisp but the grapes are still soft and juicy inside, about 15 minutes. Serve warm or at room temperature with yogurt.

Scaling Disclaimer: EatingWell recipes are tested extensively in the EatingWell Test Kitchen. Eating Well cannot guarantee a recipe that has been scaled to make a different number of servings from the original. Also note that scaling only applies to the ingredient measurements: no adjustment is made to the recipe instructions, so pan sizes and cooking times and ingredient amounts referred to in the text of the recipe only apply to the original number of servings.
