|4 boneless skinless chicken breast half||2 red bell peppers, roasted and cut into strips|
|Italian salad dressing||1 cup part skim Mozzarella cheese|
Marinate chicken as long as you want (up to overnight) but at least 30 minutes in Italian salad dressing.
Broil each side of the chicken about 10 minutes, depending on thickness. Take out of oven, and add peppers on top of chicken.
Cover with cheese. Heat through under broiler to melt cheese, about 3-4 minutes. Remove and serve with pasta or vegetables and enjoy!
Substitution Tip: Teriyaki sauce may be substituted for the Italian dressing.
