Makes 8-10 servings
Roughly chop 2 cups roasted salted peanuts and set aside in a bowl. Melt a 12-ounce bag of chocolate chips in the microwave for 1 minute on high, stirring well, then microwave for a couple of 15-second bursts, stirring well after each, just until smooth. Don’t overheat or the chocolate will stiffen up and burn.
Dip the chips from a 6-ounce bag of ruffled potato chips halfway into the chocolate, then sprinkle with chopped peanuts while the chocolate is still soft. Set the coated chips on a baking sheet lined with wax paper and chill in the fridge till the chocolate is set.
