Sausage and Beer Simmered Potatoes

    1 tbsp olive oil 3 lb red potatoes, cut into 1 inch cubes
    1 onion, chopped 1 tsp salt
    3 clv garlic, minced 1 tsp pepper
    1 lb smoked sausage, thinly sliced 1 bn green onions, thinly sliced
    1 cn (10 ounce) beer 2 tbsp fresh chopped parsley, plus extra for garnish

      In a 5 quart Dutch oven over medium high heat, sauté the onion and garlic in the olive oil for 3 minutes. Add the sliced sausage and continue sautéing for an additional 3 minutes. Add the beer, stir, and simmer for 2 minutes.

      Stir in the potatoes, salt and essence. Reduce heat to medium, cover and simmer for 15 minutes, or until the potatoes are just fork tender. Remove the cover and gently stir in the green onions. Continue cooking uncovered for an additional 5 minutes.

      Remove the Sausage and Beer Simmered Potatoes to a serving dish and garnish with the chopped parsley.
