A quick homemade seasoning blend elevates simple, oven-roasted French fries to a whole new level. Tossing the fries every 15 minutes will help them brown evenly on all sides.

| 2 pounds (about 3 medium) russet potatoes, scrubbed clean | 1 teaspoon onion powder | |
| 1 tablespoon vegetable oil | 1 teaspoon garlic powder | |
| 2 tablespoons finely ground cornmeal | 1/2 teaspoon salt | |
| 1 teaspoon paprika | 1/4 teaspoon cayenne pepper |
Preheat oven to 450 degrees F. Cut the potatoes into 1/2-inch-thick fries. In a large bowl, toss the potatoes with the olive oil.
In a separate bowl, combine the remaining ingredients and mix well. Toss the potatoes with the seasoning mix until each fry is well coated. Spread the fries in a single layer on parchment-lined baking sheets. Cook the fries for 45 minutes, tossing every 15 minutes, or until they’re crispy and browned. Serve with spicy Dijon mustard or ketchup.
