|2 Tbs sesame oil||1 cup diced boneless fully cooked smoked ham|
|3 large eggs, beaten||3 cups cooked rice, cooled|
|1 clove garlic, minced||2 tsp white pepper|
|1/2 cup diced sweet onion||3 scallions, chopped|
|1/2 cup finely diced carrots||Japanese soy sauce|
|2 tsp Japanese mirin|
Heat a wok over very high heat. Add 1 tablespoon of the sesame oil and stir. Stir in the eggs and cook for 30 seconds, until loosely scrambled. Remove the eggs to a plate and set aside. Add the remaining sesame oil to the wok. Stir in the garlic, onion, carrots, and mirin. Cook, stirring, for 1 minute, or until the onion starts to brown. Stir in the ham and cook, stirring, for another minute. Return the eggs to the wok and stir to combine with the ham and vegetable mixture. Add the rice and white pepper and cook, stirring, for 30 seconds, until everything is well combined. Stir in the scallions and serve hot with soy sauce on the side.
