The shelf life of baked goods

Dear Baker:
What's the best way to store baked goods and for how long? --iVillager Vicki578

Dear vicki578
Bread that will be used in a day or two can be wrapped airtight and stored at room temperature. Do not refrigerate homemade bread unless filled with meat, cheese or other perishable ingredients; it hastens staling. To keep bread for more than a day or two, wrap airtight and freeze for up to three months. Thaw frozen bread at room temperature (loaves generally take 2 to 3 hours to thaw) or in a microwave oven on the defrost setting (30 percent power) for about 4 to 8 minutes. Bread sliced before freezing can go directly from the freezer to the toaster. Frost sweet breads and coffee cakes after thawing.
